Healthy Winter Cooking: Maple Baked Apples


Maple Baked Apples with Cranberries

Serves 2

Ingredients:

  • 2 small apples such as Jonathan or Honey Crisp
  • 1/2 cup apple cider or apple juice
  • 1 tablespoon butter
  • 2 tablespoons maple syrup
  • 2 sticks of cinnamon
  • 1/3 cup dried cranberries
  • 1/4 cup walnut pieces (optional)
  • Directions:
  • Preheat oven to 350 degrees F. Core the apples and place in a baking dish.
  • Bring apple cider, butter, and maple syrup to boil in a small saucepan. Pour over apples. Add dried cranberries and a cinnamon stick to center of each apple.
  • Bake for 40 - 45 minutes or until apples are tender, basting the apples with the juice mixture.
  • To serve, spoon cider mixture over apples, and sprinkle with walnut pieces (optional).
