Healthy Winter Cooking: Baked Salmon & Zoodles


Baked Salmon

Serves: 2

Ingredients

  • 2 Salmon filets (4 oz each)
  • 2 teaspoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon dill
  •  Juice from ½ lemon
  • Salt and pepper to taste
  • 2 Tablespoons red pepper jelly (optional)
     
    Directions
  1. Preheat oven to 400 degrees F
  2. Pat salmon dry and place salmon skin side down on a foil lined pan.
  3. Combine olive oil, garlic, dill and lemon juice in a small bowl and mix well.
  4. Spread the olive oil mixture on top of each salmon filet.
  5. Place in the preheated oven and bake for about 15 minutes until the salmon is cooked through.  Season with salt and pepper to taste.

Festive option:  Prepare the salmon in the same way, except omit the garlic and reduce the dill to ¼ teaspoon.  Heat the red pepper jelly in a microwave for 10 – 15 seconds and top the salmon filets with jelly right before serving.

  

Sauteed Zoodles with Tomatoes

Serves: 2

Ingredients

  • 1 package Spiralized Zucchini
  • 1 cup cherry tomatoes, sliced in half
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a pan over medium heat and add garlic and sliced grape tomatoes.
  2. Cook until the tomatoes are soft and have released some of their juices.
  3. Add the spiralized zucchini and sauté until the zucchini noodles are tender, about 2 – 3 minutes.
  4. Season with salt and pepper to taste and plate with the baked salmon.
