Healthly Winter Cooking: Lentil Soup


Lentil & Winter Vegetable Soup

Makes about 8 cups

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 cup carrots, diced
  • 1 cup onion, diced
  • 1 cup celery, sliced
  • ½ cup leeks, sliced
  • 6 cups of low-sodium vegetable stock
  • 1 cup red lentils, sorted, and rinsed well
  • ½ cup prewashed and chopped kale
  • ½ cup tomato puree
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Directions

  • Heat oil and sauté onions, garlic, carrots, celery, and leeks over medium heat for about 5 minutes until onions are translucent.
  • Add thyme, tomato paste, lentils and vegetable broth to the vegetables and bring to a boil over high heat. Once boiling, turn down heat and allow to simmer for about 20 minutes until lentils are tender.
  • Add kale and simmer for another 10 minutes.
  • Season with salt and pepper to taste and serve immediately.
